You don't know what to do with your leftover chicken? I can tell you right now. Use it to make this delicious chicken and cheese quesadilla. Simple, easy, fast!
A quesadilla is actually a wheat or corn tortilla filled with a savory filling and folded in the middle. So the end shape is a half circle. But there is so much you can do with those tortillas and why not have a mix of sweet and sour like my recipe? I also think that by frying the quesadilla gives it extra flavors and color.
what You Need for each flat tortilla:
- 2 flour tortillas
- 3/4 cup cooked chicken (just pull the chicken apart with your fingers)
- 1 cup shredded cheese (choose your favorite)
- 1 tablespoon melted butter (10 to 15 seconds in the microwave will do)
what To Do:
Gather your ingredients.
Scatter half of the cheese on one tortilla.
Then the chicken.
And the rest of the cheese.
Place the other tortilla on top.
Brush melted butter on one side, preferably using a silicone brush.
Carefully place one hand under the tortilla's side with no butter ...
Until the tortilla is well balanced on it ...
(the light made the tortilla look darker, but it's the same tortilla)
Put the frying pan over it until it almost touches the frying pan ...
... and turn it quickly so the tortilla does not fly all over your kitchen.
(Remember kids, I am not there to clean the mess up)
Now the side without butter is up so spread butter on it.
Turn on the heat to medium and let the under side of the tortilla turn golden brown.
You can use a thin silicone spatula to keep checking how dark it is.
Turn the quesadilla using a wide spatula.
I help by lifting the edge of the tortilla with a silicone spatula.
Then cook the other side until it's golden brown.
A pizza cutter makes it easy to cut :)
