Chicken in Mayonnaise



This dish is very tasty and so easy to make. Another great option for bachelors and busy moms. Make sure you have lots of veggies with it. 



Just don't pay attention to the list of ingredients of the onion soup mix or you will flip. There are 19 (I counted ... I swear) different ingredients and some of them sound more like the ingredients of a mad scientist experiment than food. Maybe they are not food after all. But honestly this chicken tastes great and I know you are not going to eat this every day. So enjoy!

What You Need:
  • 4 chicken breasts without skin (if they are too thick cut them in half lengthwise)
  • 1 packet of onion soup
  • 1/4 cup bread crumbs (Panko breadcrumbs are the best but others will work too)
  • 1/2 cup light Mayonnaise
  • butter to coat a baking dish
Optional: 1/2 tablespoon dried chives or parsley or both

What To Do:




Gather your ingredients.
I am making just half the recipe.




Preheat oven to 350 F.




Wash the chicken breasts with running water ...








... and dry them with a paper towel.






If the fillets are too thick you can cut them in half or cut their thicker part in half. 




Coat a baking dish with butter.







Place the fillets in the buttered baking dish.






 Mix onion soup, chives and bread crumbs in a small container/bowl. Set aside. 






Coat the fillets with mayonnaise.






Then coat them with the bread crumbs mix.







Put it in the oven and bake uncovered for 25 to 30 min.





Meanwhile prepare your sides like rice and veggies.




 Check if the meat is cooked through by making a cut on its thickest part and looking to see if there is still pink meat.
