- 2 cups finely chopped spinach

Chop the spinach.
Place the diced tomatoes in a pan and let it boil.
Add the spinach.
In the beginning it might look like it is too much but the spinach will wilt.

Make a small pool in the tomato/spinach blend with a spatula.
Place one of the eggs in the space created.
