ridiculously easy garbanzo beans soup




This recipe comes mostly from cans, ouch, but that's what makes it a ridiculously easy recipe. So, if you can forgive yourself for not really cooking from scratch, this is a great option for a busy night or for an "Oh my gosh I need something else other than a sandwich to take to work for lunch."


And again I rely on Trader Joe's fabulous products, one of them being crucial to this recipe as it imparts most of the flavor. It's the Diced & Fire Roasted Organic Tomatoes with green chiles. 



what you need:



  • 2 cans Trader Joe's Fire Roasted Organic Tomatoes with green chiles
  • 1 can Trader Joe's tomato sauce or diced tomatoes
  • 2 cans Trader Joe's Organic Garbanzo Beans (drained)
  • 1 bag (10 oz) shredded carrots

Notes: 
- you can also just use 3 cans of the tomatoes with chiles.
- if you have time and energy you can start this soup by sautéing half an onion and 3 garlic cloves in olive oil and then add the tomato sauces to the pan. It will add flavor to your soup. 


Serves 4 


what to do:

Put the carrots, tomato sauce, and the tomatoes with green chiles in a large saucepan over medium high heat. Once it boils, reduce the heat to low and let it simmer for 20 minutes.
Add the 'drained' garbanzo beans and let it simmer for about 8 more minutes.
