Chocolate Pudding Cholesterol Free



Silky and delicious. Not very sweet. And no cholesterol 😀

What You Need:
  • 2 cups coconut milk
  • 2 tbsp cornstarch
  • 1/4 cup honey 
  • 1/4 cup cocoa powder
  • 1/2 tsp salt
  • 50 grams semi-sweet chocolate chips (or pieces of solid chocolate)
  • 2 tsp vanilla extract
Serves 4

What To Do:
  1. Place coconut milk, cornstarch, honey, cocoa powder, salt, and chocolate chips in a saucepan and mix well before turning on the heat. You are just blending the ingredients to form a more uniform mix.
  2. Place the pan over medium heat and stir constantly until it starts boiling. 
  3. Reduce heat and simmer for 2 minutes. Always stirring/whisking.
  4. Remove from heat and add the vanilla.
  5. Pour the hot pudding into a container and cover the top with plastic wrap touching the surface of the pudding so a skin does not form. Or you can already put the pudding in four ramekins and cover.
  6. Refrigerate for at least one hour before serving.

Notes
  • You can serve the pudding in transparent cups/bowls with a layer of crushed graham crackers at the bottom and topped with whipped coconut. 
  • You can also top with chocolate shavings and nuts.
