What You Need:
- 2 cups coconut milk
- 2 tbsp cornstarch
- 1/4 cup honey
- 1/4 cup cocoa powder
- 1/2 tsp salt
- 50 grams semi-sweet chocolate chips (or pieces of solid chocolate)
- 2 tsp vanilla extract
What To Do:
- Place coconut milk, cornstarch, honey, cocoa powder, salt, and chocolate chips in a saucepan and mix well before turning on the heat. You are just blending the ingredients to form a more uniform mix.
- Place the pan over medium heat and stir constantly until it starts boiling.
- Reduce heat and simmer for 2 minutes. Always stirring/whisking.
- Remove from heat and add the vanilla.
- Pour the hot pudding into a container and cover the top with plastic wrap touching the surface of the pudding so a skin does not form. Or you can already put the pudding in four ramekins and cover.
- Refrigerate for at least one hour before serving.
Notes:
- You can serve the pudding in transparent cups/bowls with a layer of crushed graham crackers at the bottom and topped with whipped coconut.
- You can also top with chocolate shavings and nuts.
