French Haricots with Shallots


Haricots or French Green Beans are a flavourful and healthy side dish. 


what you need:

  • 2 cups water
  • 1 pound haricots
  • 3 tablespoons olive oil or butter
  • 1 shallot finely chopped 
  • salt and black pepper to taste
  • 1 teaspoon lemon juice (optional)


Notes: 

  • You can spice up your haricots with toasted garlic, toasted almond slices, toasted pine nuts, diced ham or bacon bits.
  • If you just have onions at home that would work as well instead of shallots.
  • You can do the same recipe with regular green beans as well.


what to do:

Add the beans in a pan with 2 cups of boiling water.

Cook them stirring/tossing them occasionally, until they are barely crips. About 7 minutes. 

Drain and reserve.

Melt the oil or butter over medium heat, add the shallots and sauté for about 1minute.

Add the haricots, toss to combine.

Season with salt and pepper to taste.

Add lemon juice if using it.

Serve immediately or reheat prior to serving.
