A versatile sauce that can be used as salad dressing, pasta sauce, and over cooked or steamed veggies.
what you need:
- 1/3 cup tahini, stirred well
- 3 tablespoons lemon juice, freshly squeezed
- 1 garlic clove minced
- 2 tablespoons olive oil
- 1/2 cup fresh parsley
- 1/4 cup fresh chives
- 1/4 cup ice cold water (add more if the sauce is too thick)
- Honey or maple syrup to taste - start with 1/2 tablespoon
- salt and pepper to taste (try 1/4 teaspoon to start)
what to do:
Whisk all ingredients together and pour it over the veggies.
The sauce can be served room temperature or slightly warmed.
Variations:
Beet tahini - Add a cooked or roasted beet to the sauce and blend until smooth. You can also add 1/4 teaspoon of coriander.
Green Tahini - Add 3/4 cup fresh cilantro, 3/4 cup fresh parsley, 1 teaspoon maple syrup, and 1 teaspoon olive oil
Turmeric Tahini - Add 1/2 teaspoon turmeric, 1 teaspoon fresh ginger, 1 teaspoon olive oil, and 1 teaspoon maple syrup.
