Baked Zucchini Wedges

 


A delicious and healthy choice.

The amount of ingredients in this recipe are relative and will depend on the amount you have. 


what you need:

  • 2 to 3 zucchinis, cut in wedges
  • olive oil
  • salt and pepper
  • turmeric
  • ginger
  • crushed garlic
  • breadcrumbs (optional)
  • grated Parmesan (optional)


what to do:

- Preheat oven to 450F 230 C

- Arrange the zucchinis in a single layer on a cookie sheet covered with parchment (skin down).

- Sprinkle olive oil.

- Sprinkle salt and pepper and all the other ingredients on top but not the breadcrumbs and Parmesan.

- Bake for 12 to 18 minutes or until the zucchini is lightly browned

- Sprinkle the Parmesan and breadcrumbs and return the cookie sheet to oven until the Parmesan is golden.
