A great substitute for french fries.
what you need:
- 2 to 4 parsnips
- 2 garlic cloves crushed
- olive oil
- salt and pepper to taste
Variations:
- 1/4 teaspoon paprika
- Add red pepper flakes
- Add cayenne pepper
- Add 1 tablespoon of honey and 1 tablespoon of Dijon mustard to the bowl with oil.
- Add fresh chopped herbs to the bowl (parsley, rosemary, thyme, etc)\
- After they are cooked, sprinkle shredded parmesan or nutritional yeast.
Notes:
- Choose firm parsnips with no brown spots.
- Cut the sticks in similar thickness for uniform cooking.
what to do:
Preheat oven to 220 C (425F)
Wash the parsnips well. No need to peel them.
Cut them into sticks.
Place them in a bowl with the garlic, enough olive oil to cover them well and salt and pepper to taste.
Place them in a cookie sheet in a single layer.
Bake for 20 to 30 minutes.
Serve immediately.
