Almond and Dates Cookies


The combination of almond flour and dates is a match made in heaven. Enjoy!



what you need:

  • 1 cup blanched almond flour
  • 3/4 cup dates
  • 3 tbsp olive oil
  • 1 tsp vanilla extract
  • pinch of sea salt


what to do:

Soak the dates in hot water for at least 40 minutes.

Preheat oven to 180 C / 350 F 

Put dates olive oil and vanilla in a blender/processor until it's almost a paste but there may still be small pieces and that's fine.

Add the flour to the blender and blend until you have a dough or mix by hand. 

Make small balls and place them on a baking sheet lined with wax paper. The size of the cookies is up to your preference.

Flatten them with your finger dipped in water or use a fork to make a pattern.

Bake for about 12 to 15 minutes

After the cookies cool a bit transfer them to a wire rack.


Options: 

- Decorate them by drizzling melted chocolate.

- Bake them with an almond in the middle or press it as soon as the cookies come out of the oven.



- Use hazelnut flour instead and decorate with whole hazelnuts.
