The combination of almond flour and dates is a match made in heaven. Enjoy!
- 1 cup blanched almond flour
- 3/4 cup dates
- 3 tbsp olive oil
- 1 tsp vanilla extract
- pinch of sea salt
what to do:
Soak the dates in hot water for at least 40 minutes.
Preheat oven to 180 C / 350 F
Put dates in a blender/processor until broken into small pieces. It is not necessary to turn them into a paste.
Add the other ingredients to the blender and blend until you have a dough.
Make about 12 to 14 balls and place them on a baking sheet lined with wax paper.
Flatten them with your finger dipped in water or use a fork to make a pattern.
Bake for about 12 to 15 minutes
After the cookies cool a bit transfer them to a wire rack.
Options:
- Decorate them by drizzling melted chocolate.
- Bake them with an almond in the middle or press it as soon as the cookies come out of the oven.
