Deliciously nutty and sweet but not really like regular chocolate chip cookies. After all there is no sugar involved.
what you need:
- 400gr / 15oz can chickpeas, rinsed and well drained
- 1 cup peanut butter
- 1 teaspoons vanilla extract
- 2 tbsp maple syrup or honey
- 1 tsp baking powder
- 1/4 tsp salt
- optional: 1/2 cup chocolate chips
what to do:
- Preheat oven to 175C / 350 F and line 2 cookie sheets with baking paper
- Place chickpeas in a food processor and pulse for about 15 seconds or until they are a thick paste.
- Add the rest of the ingredients except the chocolate chips. Process for at least one minute until the mixture is smooth.
- Add chocolate chip and pulse a few times to mix.
- Make balls with about 1 to 2 tbsp dough and form the cookies.
- Press the cookies with a fork.
- Bake for 12 to 15 minutes and let them cool on a rack for at least 30 min.
