Protein rich vegetable stew


Warm up with this vegetable protein stew. The one in the picture was made with boiled egg whites as a choice of protein.

what you need:

  • onion
  • garlic
  • olive oil
  • 1 can of crushed tomatoes
  • 1 small eggplant peeled and cubed
  • 1 small red bell pepper cubed
  • 1 cup of shredded carrot
  • 2 cups spinach
  • your choice of protein like sardines, boiled eggs, tofu, left over chicken, 


what to do:

Saute onion and garlic. 

Add crushed tomatoes and cook.

Add bell peppers, eggplant and shredded carrots.

Let it boil then cook over low heat for 15 minutes.

Add spinach. When the spinach wilts it's ready.

Plate and top with your choice of protein.
