Tofu Chunky Pasta Sauce


Easy last minute vegan pasta sauce.


Ingredients:

  • 200 gr tofu firm or extra firm
  • 2 tbsp extra virgin olive oil 
  • 1 garlic clove crushed
  • 1 small onion chopped
  • 2 1/2 tbsp lemon juice
  • 3 tbsp nutritional yeast
  • 1/8 tsp Dijon mustard
  • 1 cup soy or almond milk
  • 3/4 tbsp corn flour (dissolved in the milk) 
  • salt and pepper to taste
  • chopped parley and chives to taste 


What To Do:

Rinse and pat dry tofu.

Saute onion and garlic.

Add tofu and smash it with a potato masher.

Let it cook for a couple minutes.

Add the lemon juice, nutritional yeast, mustard, and the milk with corn flour.

Stir until it thickens.

Mix in chopped chives and salt and pepper to taste.

If you want it creamy use an immersion blender.
